Chef Marty Rich – Tip of the Day: Kitchen Tour

Submitted by admin on Wednesday, November 11 2009No Comment

Hi I’m Marty Richardson from chefmartyrich.com. Welcome back to the daily tip series.

Kitchen Tour

I finally got my kitchen.  Be careful what you wish for because you just might get it!  I’m going to give you the tour. The kitchen is basically empty, all the machinery is running, the refrigeration is going, and the condensers are cycling on and off.  It’s a much bigger space than my mother’s tiny galley kitchen. The sound is a little bit strange. So stick with me.

Video Previews

I ‘m going to give you two more videos after this about appetizers, how to put a cheese platter together and one about dips and spreads.   I’m not sure what I’m going to do after that.  Maybe shooting at home is the best cure after all. So come on with me, I’ll give you a quick tour of the kitchen.

Commercial Kitchen Setup

This is the prep area behind me.  Stainless steel tables which are always nice, because they are easy to clean.  Then, we have a sink area for washing up your hands.  Down the line, is a nice pot sprayer, and triple stainless steel sinks, which every commercial kitchen needs. We are going to get into the sanitation portion of this presentation right before Thanksgiving, for something nice and appetizing, talk about – food born illnesses.   Here is another little prep area, with a coffee station and the microwave.  Then around the corner , we have two side-by-side refrigerators.  The generators are pretty loud.  Outside there this swinging door is the ballroom.  Here is the professional convection oven, which is beautiful.

Turkey Challenge

I think I will be doing Thanksgiving dinner here.  There is a regular, conventional oven with a six burner trange that is a real luxury.  I will probably only try to use four to make it realistic for the “Timed Turkey Challenge”.  Here is the other cooler down the line, and a big prep table right in the middle of the kitchen.

So that is pretty much it.  That is a quick tour of the new kitchen and, like I said, I’m not really sure whether this is going to work out or not, but for today – I hope you bear with me. And we will get through the appetizer section and get right on to Thanksgiving dinner.  Thanks very much for tuning in and I am going to shoot the next video straight away.  I’ll probably upload them both today so you can go right to the next one.  Thanks
